Unfortunately not currently possible as the form data and reminder data are currently separate so we don't have the reminder due date as a merge filed.
Being addressed though as you can see in this JIRA which is scheduled for the next version.

Reminder due date

Field "endTime" has been suggested. Have trialled through single file and produced correct date.
Where does this field link? Should it work?

Hi James,
The 'endTime' field will only be available in reminders not in documents. So this works for reminder letters but not for certificates.
